Line with baking paper a baking tin 24cm x 32cm.</p> <p>For the base add the flour, icing sugar and the butter, cubed, into a food processor and  process until combined thoroughly, do not over mix.</p> <p>Tip this into the lined tin and press lightly, bake for approx 12 minutes, you should see a slight change in colour only.</p> <p>While the base is cooking prepare the topping by putting the sugar and lemon rind into the food processor and blitzing, add the eggs then juice and flour, process until well blended. Once the base is coloured pour the topping over it carefully and return to the oven and bake for a further 20-25 minutes or until the top is lightly browned. Ideally you want the topping to still have a little "wobble" to it so watch that you don't over cook as you want the finished product to have a thick lemon honey type result.</p> <p>Completely cool before cutting and be sure to wipe the blade of the knife between slices, sprinkle with icing sugar prior to serving.
